Potatoes
So zealous frugality has landed me with a 20lb bag of potatoes. It was the same price as the ten pound bag. Problem is we never eat potatoes. But obviously I got it in my head that they'd be good to add to our repertoire. Since we don't eat much meat, "meat and potatoes" gets chopped down to just potatoes. Do you have any ideas to help us out? Any potato based meals that don't cry for roast beef? Thanks in advance!

    I have a potato soup that I love and also a recipe for herb roasted potatoes that's great. You could have chicken with it...

    au gratin potatoes are always good. Or you can make Scalloped potatoes. Potato pancakes or potato latkes (sp?) are yummy too.

    It's funny, as I was reading your post I thought "there are plenty of non-meat potato dishes", then as I went to leave a comment I couldn't come up with any.
    We make a vegetable medley, which is basically whatever we have (potato, sweet potato, carrot, peppers, etc) with a little oil and seasoning that we cook in the oven until everything is soft. It's also very good with just potato and sweet potato.

    Cut like fries or wedges or chunks. Toss in olive oil and cook in oven 350/400 for 20mins/side ish (max 45mins) voila! home-made fries. Add anything you like to oil for additional flavours. We like parmesan cheese. Sometimes I cheat and use italian dressing instead of oil. mmm I love potatoes.

    I like to slice them scallop thin, place in a crockpot with about half a head of shredded cabbage, enough water so the potatos are covered but not swimming and 1/4 cup vinegar (salt pepper etc) I do mine with a few slices of fried and crumbled bacon with the fat. Not much but it does add a good flavor. Cook it on high until it boils, stir, and then flick it to low until nice and tender.

    Course that just begs to be paired with something meaty but I could still eat plates and plates of that stuff.

    I love potatoes. Potato soup my mom's recipe. Turkey or chicken soup with lots of potatoes and veggies and just a few noodles. Baked potatoes filled with chilli and cheese and sour cream, or filled with cheese and brocolli. Creamed potatoes with bits of ham in them. Scalloped potatoes with farmer sausage. (I know you said no meat - but this little can go a long way!) Potato pancakes and apple sauce. Roasted potatoes with other veggies. Any kind of potatoes with baked chicken or salmon. Are there potatoes in your hamburger soup? Potato salad for a summery feeling.

    I don't eat potatoes or that much meat either for that matter. haha I LOVE BEANS!!! BUT YOU KNOW, I have a potato recipe for you from my FAV. recipe book! and you know what's fun about this one? Your kiddies can eat it too, w/o a problem I think.

    Leek and Potato Soup

    Ingredients
    4 1/2 cups water
    4 Med potatoes (peeled and cubed)
    1 cup onions (diced)
    1 small garlic clove(minced)
    1/2 cup potatoes (diced)
    1 med leek (chopped)
    2 tsp salt
    1/4 tsp rosemary
    1/8 tsp thyme
    1/8 tsp pepper

    Directions
    Boil the first 3 ingredients together for 40 minutes, then blend in a blender. Steam the diced potatoes and leeks. Add to the soup along with the seasonings and serve.

    A Scottish classic, each delicious mouthful reminds me of misty glens and lochs!

    Corn Potato Pancakes
    PREP TIME 5 Min
    COOK TIME 15 Min
    READY IN 20 Min
    INGREDIENTS

    * 140 g mashed potatoes (prepared with milk and butter)
    * 10 g all-purpose flour
    * 20 g cream-style corn
    * 1/3 egg, beaten
    * 10 g finely chopped onion
    * 0.4 g minced fresh parsley
    * 1 g salt
    * 0.5 g minced garlic
    * 0.1 g pepper
    * 15 ml vegetable oil, divided


    DIRECTIONS

    1. In a large bowl, combine the first nine ingredients. In a large skillet, heat 1 tablespoon oil; drop four 1/4 cupfuls of batter into skillet. Cook for 1-2 minutes on each side or until golden brown. Repeat with remaining oil and batter.

    I make a potato soup similar to Demara's ... but instead of leek I chop up 1/2 bunch of celery. Then I add 1 tsp of Patak's curry paste. Then I puree. This was my Grandma's recipe (except for the curry of course - illegal to use spices in my grandma's day).

    We also make Champ ... mashed potatoes (whipped using a mix master ... with butter (a little) & whatever liquid you prefer ... milk/stock/potatoe water/plain rice milk/plain soy milk). We add oregano & green onions.

    We have also started making Samosa filling ... mashed potatoes with curry powder, tumeric, plus sauteed whatever ... garlic/onions/kale ... anything you have that needs using up. Then you fold in peas. We don't make the crusty outer layer ... too much oil & fuss.

    We would have this as a main course with bread & then have a simple dessert.

    I'm suddenly very hungry for potatoes. Something that I've made a lot in the past but not for a long time is a baked potato sliced in half and tomato based pasta sauce on top and then some cheese. Chili works really well with this too. You could use veggie chili and it would be scrumptious. Also potato skins .. . ooey .. .gooey . .
