Get Away
Hi guys. I'm in BC now. Arrived one week ago. I can't believe it's only been a week - time has gone quickly and yet it seems like we've been here longer.

The wedding on Friday was beautiful and somewhat quirky - there was some tension between the minister and the bride about the order of the service - they argued while the audience laughed akwardly under their breaths. It was a very happy time - we've been friends with the groom for years and have been praying for a good wife for him - He found Elizabeth and she is perfect for him!

Saturday - as Platinum Blonde readers will know - Melanie and I spent the day together on Bowen Island. What a delightful day. So good to see Melanie again. We laughed, hiked, took photos, had picnics, took a ferry, enjoyed watching fuzzy geese, talked and talked. Excellent day. At one point Melanie turned to me and said she didn't know when the last ferry left the island. It was 5pm ish and we wondered if we were going to miss it. The idea of being stranded together for the night didn't look bad at all -- adventurous! In fact, we were a little disappointed to find out that the ferry runs until 10pm. I got home at 11pm and had a much needed sleep.

Sunday we went to my Grandparents (Klassens) place to celebrate mother's day. It was so good to see some of my family. Including my cousin Erin who is now a faithful reader. Speaking of Erin, when we talked she suggested I post recipes on my blog. So Erin, here's a dessert to try:

Fruit Cobbler (adapted from "Essie's Cobbler" -- More with Less Cookbook)

350F

Mix together:

2 cups Whole Wheat Flour
4 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 cup powdered milk (optional)

Add:

1/2 cup soft butter/margerine

Mix in:

1 1/4 cup juice (I used unsweetened pineapple, apple works good too)

Spread batter into a greased 9x13 pan.

Top with:

2 cups (or more) chopped fruit (I used raspberries and apricots)
-canned, fresh or frozen work fine

Pour over:

2 cups fruit juice (I used pineapple)
-this looks funny but turns out good

Bake for 45-50 min.

Serve with cream poured over, or with ice cream or with whipped cream.

I also enjoy this plain with cheese alongside.

I think this blog is getting long and I haven't even told you about our anniversary getaway. Okay, here's the quick version. We stayed for three nights at my Auntie Laurie and Uncle Merv's (Erin's folks) cabin in Hemlock (about 50 min away). It was such a blessing to get to stay there. The scenery is beautiful - so green, and peaceful. We relaxed so much. We hadn't been away together for three nights since our honeymoon. Extended time together was really good, and needed. I was hoping to see some bears but didn't see any. Did enjoy a couple nice walks and beautiful wild flowers - foxglove, lupine and columbine. It is hard to come back to the busy world after being so relaxed - I'm sure I'll get back into routine.

I've been having way more headaches than usual - maybe I should go have a nap.
